Craig, it is possible to straighten out the curves for images with an angular coverage up to about 90 degrees quite easily, and with considerably more difficulty up to about 120 degrees, although PS is not the best tool. Power Retouche tools are the best I've encountered. After that, well, you get to realize why there are no rectilinear lens designs with that coverage. The spatial distortion is just too great to make it worthwhile. Marginally OK for buildings, perhaps, but not if you have people in your scene. Unless you like people with funny-shaped heads...
