Enzo, I see a very picturesque capture! The cloud highlights blowing out is a problem common for us all with the limited dynamic range of digital. Some take two exposures (one for shadow and one for highlights) and combine them in Photoshop. If you shoot RAW you can also take two post camera exposure versions of the single image and blend them.
