I'm using Pyrocat-HD for most of my work lately. I keep a package of D-76 around too, good general purpose developer, comes in handy sometimes.

I used to use Ilford's ID-11 for almost everything, but now I am slowly switching to Fomadon Excel (Xtol clone).

for 35mm we are using HC110 (all student work) for my own work I have been using PMK but am moving toward Pyrocat-Hd.
Depending on the project my developer may change for a special project.

Up until the last year, I was a 30+ year D-76 1:1 guy, and I got great results with everything. (I flirted with Microdol-X and XTOL over the years, but I always came back to D-76!)
I now do so little film developing that I switched to HC-110 Dilution B, and it works well, but results are definitely slightly grainier. This is a problem with my Minox negatives, but pretty much not noticeable on larger negs...
I wish I could still use D-76, but since I only need a few ounces a year, it just doesn't make sense - I kept throwing away most of my recent batchs as they approached a year in age...

All:
It depends.
1. D-76 or HC110 for general work.
2. For finer grain, half way between microdol and d-76, FG 7 at 1:15 with or without sulfate.
3. Finest grain would go to Microdol-x
4. Last but not least you can not beat Rodinal.
Ted
P.S. Any thoughts on Acufine or XTOL?

I've been using HC110 for TriX and HP5 and D76 for FP4 and APX100. I will try HC110 with FP4 soon to check if I really need 2 different developers.

Xtol for everything (Trix, Tmax, Deltas, PanF, HP5, including expired films). If you want something weird, try Xtol and Rodinal mixture :). Here is a link with instructions: http://unblinkingeye.com/Articles/Rodinal/rodinal.html How it works, see attachment:

I use D23 1:1 and Divided. This is my everyday developer with most films. I usually use AGFA APX 100 in both 35mm and 120. I also use Pyro Developers -- depending on the film and effect I want. Pyrocat HD 1:1:200 extended development, PMK PYRO and WD2D+. This is all great stuff.

Honestly ease of use. I was a diehard D76/ID-11 user for years but I was turned on to Diafine a few years ago and I love it. I can develop different films shot at different speeds in the same tank at the same time. It holds the highlights well with great shadow detail and little grain. This image was shot on Tri-X at ISO 1250 and developed in Diafine...

I use Diafine almost exclusively now thanks to Chris Lauritzen. When I have needs that Diafine can't meet, I use HC-110 for about 2/3 recommended time followed by a second two-teaspoon bath of Sodium Metaborate.

What am I looking to spend if I want to get into developing my own black and white? I see you reccomend Daupine
Also what types of film should I be looking for to buy in bulk and where at? How much?
Last but not least, do you have any sites you reccomend I look at to learn more about it

I use D-76. I used T-Max Developer with T-Max film and it turned out very purple, I had to hypo it for about 15 minutes, therefore I stick with the D-76.

You have got purple colour because of weak fixer - this is not a developer fault (I don't like Tmax anyway :)

Tmax films are very hard on the chemistry, so you will need to keep a very close eye on the fixer and how many rolls are being fixed per gallon. Get your self a test kit which will help you make a decision as to when you use new fixer, or take a piece of film leader and put in the fixer, fix for twice as long as it takes the leader to clear.
