Thanks, Sam. Trust me on this: the dish was better than the picture! It was delicious. There was a guy in my party that night that thought he was supposed to dip into the dish while the flames were still going. I should have allowed him to try and taken a picture of that. :) --Best to you, Jan

Hi Jan!
Well, I guess that this happens everywhere, everytime. The same happens here where I live in Switzerland. I am comfortable with that, since it is a part of that kind of exchange that happens when different cultures meet. A mixture of the elements, if you like, that can have very good results, be that food, habits, anything. People approach each other, look, choose, take and give, creating that plethora of tastes. And though I sometimes will miss the "real thing", I must say that the swiss version of saganaki is not bad at all. So, I guess my reaction to the American versions of Greek dishes would be, wow! I don't know that this way, but it's good! More of it! ;-)
If you are going to visit Greece some day, you could be also excited by the Greek version of the good old apple pie.

Thanks for the comments, Nick. I wonder how you would react to American versions of Greek dishes and whether they would be the "real deal". This particular eatery is second generation in the US and are Greek but you'd think that sometimes the recipes might be changed to meet the American pallette or based on available ingredients. Some day I hope to visit your country and eat my way through some major food places. --Best to you, Jan

seriously now, it is always very hard to capture a flame with such a high definition of texture and colors like you did. This photo could be one of the illustrations in some book about that restauerant, or even about greek cooking!

To shoot it with my camera not as a shot. Very bad. Say a film of some dumbass doing that. Caught his face and mouth on fire. Someone had to throw a beer on him to quench the flames. Although, it would have been nice to have been there with my camera ready. Hahaha.

Laura-- it was a great dinner but I could barely walk out of Dimitri's the last time I was there. I went a bit overboard. I shared the Saganaki with two others, ate an entire order of stuffed grape leaves and then polished off a dinner of Moussaka. Only the Saganaki was on fire at the table but portions of my anatomy were on fire later that night! --Jan

Marlyce-- thanks for the tip on your son's photos. I have seen a few pix posted coming from overseas but not many. He has a couple good pix here. I did two tours in Viet Nam and Cambodia from 68 to 70 with the First Air Cav as a forward observer and rememeber the isolation and loneliness (as well as other emotions). So, given that, I can identify with him and what he sees on a day to day basis. I will keep looking for new photos that he might post and will keep him in my thoughts. -Regards, Jan
