Ok, here we go:
Cyprus: 1. Take a Safari tour to Pafos Forest and Akamas, tell your driver specifically about your interest in photograpy, ask him to visit the birth place of Macarius (a very nice traditional village) and turtle beach and sea caves at Akamas by sunset. 2. Visit Trodos, especially Kikos Mo0nastery and Macarius Tomb, both have great potential. 3. Larnaca salt lakes in the spring and autumn attract pink flamingos. Even in summer you can get some nice pictures at sunsets (forget sunrise, I could not get nice sunrise pictures on Cyprus). 4. Nicosia has great potential for photo-journalism as it is one of the few divided cities. 5. If you will get more lucky than me and will be able to get a permit to photograph inside monasteries... 6. Good place for scuba diving, but I cannot comment on underwater photography since I am not into it :)
Rhodes: Both Lindos and old Rhodes City provide you with great opportunities. Great night photos!
Karpathos: Village of Olympios
Crete: Crete mountains as well as south shore. You can catch some nice scenery at Chania. Also don't discard traditional villages for great photos of traditional lifestyle (if you travel by car, get a GOOD MAP, it's very easy to get lost)
Santorini: Personally, I would not recommend it for photography, but it is a nice island to spend couple of days on.
Thesaloniki: Old town and mountains near Thesaloniki. If you are from North America, don't even think of driving in the city!
