If you can't get a guide to show you around try some of the suggestions on this site - http://www.amsterdam.nl and click on the English site. There are many unusual places/non touristy places to visit listed on that site.

Have you been to Amsterdam already?
If not, try asking Jeroen Wenting, because he's living quite close to Amsterdam and he's a nice guy.
I would help if I could, but Amsterdam is a 3,5 hour drive from my place.

I might live close, but I hardly know the ins and outs of the city (at least the hard to find stuff).
I worked there, haven't really spent a lot of time walking the streets (in part because it's not that safe walking the streets alone with camera gear given the crime levels, in a small group you can at least watch each others' back).
I wouldn't mind helping out and discovering interesting places, would have to be a weekend though.
