Excellent idea and good relization!
Photo maybe need more lights.
For me it looks fine even it's out of focus.
Try to use underwater camera if you have it.
I like your experiments.

Elena you need to prefocus your camera , put it in Manual focus mode, I hold the lemon about where I want it then focus on it , also after the lemon is wet it will drip , You can tell exactly where the lemon will fall into the water by the place where the drip hits the water I adjust my lemon until I get the drip in the right place , I also press the shuttle the same way each time if the lemon is to high in the frame lower your hand if to low then raise your hand above the tank but try to keep your timimg the same.

I don't mind the no-focus, because it looks like if the lemon is swirling round really fast, so it shouldn't even look sharper. I think this looks super!
