I totally agree with you! There is beauty in "old age" too!Colours are still great and the shape is mnagnificent, like one of those pieces of jewelry (broach/pendant head) made by an artist of the guild.The colour is magnetic...burnished gold, this is why it made me think of jewelry. I'm one of those people who pick, place in water in vase/container, could be an old teapot, and leave them to slowly dry... :) interesting to see which dry the best... and sometimes... ~~GRIN~~ they are still there many weeks later... 'cos I like them...:)

~~GRIN~~ Sandra...I'm starting to feel like the wine and cheese, to nibble & embibe that is... LOL, and on some days, I'm a little *crisp & crunchy* like this dahlia if not slathered in moisturizer... :)
The signature/name is an easy one... I often use it, like a window dressing tool, as a balance to the photo subject, especially if it needs a lift in a *flat* area...
You're right; In PS the tool palette will have a T... when you click on that, the headings across the page at the top change with drop downs. ie. type of lettering/script... size... thickness etc... plus whether type of indentation... Choose your preferences...
The colour comes from the top swatch in the colour palette which you can change via the eyedropper… If you want a shade from your *subject*, just use dropper to find preference… Place mouse curser *where* on your image, and away you go… Then merge/flatten image before doing web save…
Don’t forget to work on a copy and keep original… :) Hope this is not confusing and is of some help…:)
