Bright direct light like this often burns out the colours. I have taken so many pictures like it and been frustraited at the results. I sometimes use my body to shaddow by standing over it. Hope this helps!

Lots of reflection and harsh light on this image. Try a bit of shade and/or stopping the exposure down....
